What is the best buttercream for making roses? I have never found a recipe that has made the perfect rose! They are either sag or the ends are frayed because my icing was too stiff! Am I missing something? TIA!!

just my opinion, but I do like the Wilton class buttercream with piping gel or karo syrup added to it for roses.

I second the piping gel - although I used a different BC recipe (BC with real butter for decorators - in the recipe section). I find the piping gel makes is smoother and easier to pipe.

I love using the Air dry buttercream recipe on this site:

it is very easy to pipe with, and then even easier to handle the roses afterwards without worrying about freezing or trying to handle at room temp.

I don't know why I never thought to put the piping gel in the frosting like that. I do usually have some frayed edges on my roses so I'll have to try that next time. I just hate having to add this and that and making new frostings/fillings in all different consistencies, colors and flavors. eee gads, it can get complicated!
