When you price out a cake.. do you use the wilton serving guide? I mean it seems pretty measly when it comes to serving size. I can see it for a wedding cake.. but for a party cake? I would think an 8 inch round 2 layer cake would make 12 (generous) servings and maybe 16 tops.. not 24..
So what do you use as your serving guide? Are your wedding cake and party cake serving sizes different? I saw the one posted for Earlene's Cakes.. that seems MUCH more reasnoable..

For wedding cakes I would use Wilton's numbers. I have a price matrix that has Wilton's numbers and numbers for Party sizes. The # of party servings on it is about 3/4 of the # of wedding servings (ex. 100 wedding svgs would be 75 party servings). I also added a column for Real cakes servings and use 1/2 of the wedding servings for that (100 wedding = 50 real).
I use party servings for anniversary's, formal occasions, etc.... and I use real servings for regular birthday parties, etc...

When I make a birthday cake, I use a pan that is 12x12 so that give me 36 2x2 pieces, just one layer. I don't charge nearly as much as some people on the board, and I charge $20 for this cake. That comes out to about 60 cents a serving. But in my small town, I wouldn't be able to get much more, they would end up going to Wal-mart and getting a nasty one, because it was cheaper.
I came up with it because, at least in my family, we take big honkin pieces of cake at birthdays!!
