Can a cake covered in MMF be put in the fridge?
I have an order going out today and I have heard you shouldn't put a fondant covered cake in the fridge because it could lead to mushiness or molding. Its just covered and filled with buttercream so its not a safety issue for it to be left out. Its not overly large either so I don't expect too many leftovers, (especially since its for a bunch of male teens, lol).

I would like to know this also because I want to try out some mousses but don't want to put it in a fondant covered cake if I can't put it in the fridge. I would like to know just so I could advise the customer if it shouldn't be refridgerated.

some say yes, some say no......I personally have made a cake covered in fondant and refrigerated it over night with no problems I didn't notice that it was mushy or anything.....just made it set up a little firmer, which I wanted since it was a 3-d flower pot cake and that only helped to make it sturdier...........it all depends on the humidity in your fridge

I would just hate to have her put it in the fridge and it go all sticky, I'm not sure whether the cake is being served tonight or tomorrow. Maybe i should include a note saying that the cake doesn't need to be refrigerated?

You can put it in the fridge but make sure before that when you take it out of the fridge let it set for a while so that the condensation that will be on it can evaporate (whatever you do DON"T touch it till it's dried)
