Must Easter Cookies Be The Rolled Out Kind?

I finally decorated a batch of roll out cookies that I think can pass muster. But I decided I dislike doing them! Too much work!!

Any chance you think I could make spritz cookies or something else and put Easter sprinkles on them?

Or any other suggestions for Easter cookies or such?

I remember my mom doing a thumbprint cookie and then putting jelly beans in the imprint.

What about thumbprint cookies with lemon curd, very spring like! I don't see why you couldn't do any cookies you liked and decorate them with easter themed sprinkles - I say go for it (perhaps use white chocolate for dipping though, so it's lighter in colour - or colour it pastel colours with candy colourings).

Thumbprint cookies with pastel frosting colors, M&M cookies with easter colored M&M's, divide your spritz cookie dough into several parts and add food coloring -pastel of course. Cookies that are rolled into balls can be have the tops dipped into white/colored glaze with easter sprinkles added when wet.

Great ideas - I never thought of the Easter M&M's or the white chocolate/glaze. Do you mean dip the cookies, then sprinkle?

But I have one question - I've never made thumbprint cookies. Is that a special recipe or do I just (duh) put my thumb in any kind of dough?

Lemon curd, jelly beans...............I can't believe all the ideas you guys have. I didn't even think of tinting the dough. thumbs_up.gif

I make Hamentaschen every year and I am not Jewish, I make them for Easter. They happen to be my families favorite cookies with Apricot as well as Raspberry filling, so good!

This is a thumbprint cookie recipe. You could color the frosting green and use pastel peanut M&M's. They would look like little nests.

The round cookies with frosting that I was thinking of are Italian Anise cookies. An Italian friend used to make these at Easter time. You could use either colored glaze or pastel sugars. Just Google Italian Anise cookies and you will get a bunch of recipes.

I copied this from the thread Lets do a Christmas Cookie Exchange! Mac was the author. I have tried these cookies and love them for their light taste!! If you did lemon, and strawberry I think it would be perfect.

Here is a super simple cookie recipe that I got from a cookie swap:

Lemon Coolers

1 box of Lemon cake mix
1 egg
1 (8 oz.) container of cool whip

Mix all ingredients--will be thick and gummy. Scoop out a spoon full and drop in powdered sugar, then roll into a ball. Bake at 325 degrees for about 10-12 minutes.

I have tried these with strawberry cake mix, devil's food cake mix, and orange cake mix.

I have a cookie recipe that has (dry) jello in the dough, so you can color the cookies any color. I have a sugar cookie that I scoop with a cookie scoop and dip the balls in colored sugars before baking. Any cocount cookie can have the coconut tinted easter colors.
