I am making a three tier cake: 1 layer 9x13, with a 2-layer 8" round on top and then a 2-layer 6" round stacked on top of that. The customer wants to pick up. Do you think I should offer to deliver and put together at their place, or would it be ok just doweled then stacked?
Also, should I use cake boards between layers? I think I should?
Thanks!

doweled and stacked is fine. might want to put one through all of the cakes and boards too, though I don't usually. some people swear by it.
you can't dowel if you dont' use cake boards - that is what the dowels are supporting in order to suppor the cakes
make sure they know it needs to be on a level surface (someone holding it isn't gonna cut it) and not on a seat.
tell them that once they pick it up, any damage is not your responsibility
