Will They Still Taste Fresh???

I have my final cake for class 2, 2 dozen cupcakes and a small oval cake to do for Saturday. My question is can I bake today, decorate tomorrow and everything still taste good on Sat.?

Well---it kind of depends on what recipe you are using. Is it scratch or a mix? Mix based cakes will stay fresher longer because of preservatives.

I would really be concerned with the cupcakes keeping for that long without getting mushy.

Anyway--if you have to bake today, I would do it as late as possible in the day. Generally, if I have something for Saturday, the earliest I bake would be Thursday night.

I would bake them, freeze them, and take them out Friday night.

If you're using a mix, that should be fine as long as you keep them covered when you aren't working on them. Mix cakes stay moist for quite a while, but I wouldn't go beyond 3 days - just out of pickiness.

The only reason I wanted to get started today was b/c I have a lot to get done by Sat. I have to remake my color flow pieces for course 2 final cake (my son ate the first ones), I have to bake the cake for course 2 and crumb coat it, a bassinet cake using the same oval cakes pans as course 2 cake, 24 cupcakes, color flow icing, bc icing and chocolate bc icing.

i would bake at least the cupcakes now, pop them in a freezer bag and freeze.. when youre ready to decorate them you can do so with them frozen.
