Freezing Cake Layers?

My daughter's birthday is the day after we get back from our spring break trip, but she still wants me to make her a bday cake. I was wondering, if I made the cake before we leave how is the best way to freeze them? She is concerned about the taste and texture of the cake after it has been frozen. Any advice or tips?

How long do you plan on being gone? I think that if you wrap them really well they should be fine cakes in stores are froze for long periods of time and they still turn out great.

Just wrap in plastic wrap.

They'll be just fine. I do it all the time and have frozen for a couple of weeks and they taste great. Just make sure to wrap your cake in a few layers of plastic wrap. I wait until they are cool enough to handle without falling apart but you do not have to wait until they are totally cool after baking.

I also thaw them before I decorate them but some people do not. I think it works fine either way. If they are frozen when you decorate and condensation happens to form on your icing, DON'T TOUCH IT! icon_smile.gif Leave it alone and it will evaporate on its own.

I think it is harder to smooth a frozen cake. I let it thaw in the plastic wrap and then ice it later.

I level and torte my cake than place parchment paper between layers. Than wrap very well in saran wrap and than in foil if longer than a week. When I need the cake I take it out and put my filling and crumb coat on. than I ice it. Good Luck.

and it takes NO time for a cake to thaw. Meat takes all day but cakes are really fast.
