Using Springform Or Removable Bottom Pans...

I always have a problem with the bottom of my cake sticking to the pan. Has anyone had sucess with using springform or removable bottom pans for regular cake? Or, what is your trick for it not sticking to the bottom of a regular cake pan?

I line the bottom of my cake pans with wax or parchment paper--- I have never once had a cake stick.

when you line your pans with parchment paper, I've always heard that you should grease and flour the whole pan first, line it with the paper, and then grease and flour the paper. Is that overkill?

When I line my pans with parchment, I light grease it so the paper can attach to it. No need for flour. HTH.

I dont grease the pan beforehand, I simply cut my wax paper to shape, place it in the pan... then spray the bottom & sides with Pam baking/flour spray. Like I said-- Ive never had a cake stick.

Here's a trick my instructor told me, but I've never tried it. You can actually use a cake board, covered in aluminum foil, for the bottom of the springform pan (instead of the normal bottom that comes in the pan). Then your cake is already on the cake board! (granted, you probably need to put it on another cake board that is bigger, and that means you're cooling the cake on the cake board, but the idea of it sounds neat. It's especially useful at least for cheesecake or tarts, since you can leave the bottom of the board with whomever is taking the cake).

I use wax paper too - Just a light coting of pam spray and they never stick! thumbs_up.gif

I just use parchment paper and a little grease as well. Have not had a problem yet.
