Can Someone Critique My Cakes?

Hello, I am new to posting, but not new to the forum. I visit often and read posts and enjoy everyones talent and pictures. I have an online album of cakes, and i just started taking lessons. I"ve completed Wilton 1 and 2 and have made a handful of cakes as practice. My dream is to have my own cake business one day and eventually get up to the level of wedding cakes. I'm amazed by everyones talent and hope one day to be that good! I would like someone to take a look at my cakes and tell me if i'm on the right track and if i have the talent that is needed to do this. I work full time, so its just a hobby every now and then but it is a dream of mine. I want honest opinions. Please email me at [email protected] if that is allowed. Hi Jen;

Welcome to CC! My personal feeling is that every person should follow their dreams, no matter what others may say. You never know until you try, right? You are doing very good and the best advice I can give you is PRACTICE. If you do not have a lot of people that you can give away real cakes to, invest in some cake dummies, they are really not that expensive. i left some comments on your gallery pics for you!
On your basketweave cake, I would suggest you try to give your flowers some "lift" so they are not flat. Couple of ways to do this....

To get flowers to curl up, take a cardboard paper towel tube and cut it in half lengthwise, creating two U-shaped forms. I'm assuming you put a wax paper square on your flower nail when you make daisies.....after making the daisie, place it inside one of the U-shaped forms. As the flower dries, the petals will be curled upward, giving the flower some dimension.

Another way is to put a small "pile" of icing on top of the cake and lay the flowers on top and around this. I always use green icing as the mound of icing because if any of it shows thru, it blends in with the leaves. Keep going at it! I could see improvement with each cake and you're coming along wonderfully!

Considering you are just taking the classes, I think your cakes look good. I've always loved to bake, but never was able to make things pretty until I did the Wilton classes. Looking at your gallery it seems that you have a good eye for color and design and just need to keep practicing. It also seems that you are not afraid of trying new things so you'll do fine.

You're off to a good start! I'd like to see you do fewer star fill-ins and start branching out into your own designs or something more adventurous. Your borders look good. Your clown cake shows that you're making progress on getting your icing smooth. Your cross and Veronica's birthday cakes are nice and show a lot of promise. Time to start doing your own thang! icon_smile.gif

You're off to a great start. I will tell you what I tell my students (and they hate hearing it). PRACTICE, PRACTICE, PRACTICE! Especially the roses. The more you practice the better and easier they will get. I just have one suggestion on your roses. Thin you icing just a bit and you won't get those broken edges on your petals.
