I have a question for all of the people doing fondant cakes professionally.

I have been making my fondant the whole time, and it actually has a nice soft taste to it. However, I am finding for some reason, that it is inconsistent when I make it.

Sometimes, it comes out smooth and beautiful. Other times, it is very difficult to work with (it gets a play-dough consistency). I am sold on the taste, but can't afford to have these problems when doing fondant cakes for weddings this summer.

I would like a decent tasting fondant, but I need to purchase it wholesale. Any reccomendations?

Hello,
I always use store bought fondant because I find it easier to use and more economical for me. I have used Satin Ice which is a wonderful fondant to work with as well as great tasting. I have recently found that FondX by Caljava is the best I have tried. It is really great to work with and has the best taste I have found. They also have a white chocolate brand called Sweet Inspiration and it is also wonderful. I would give those a try if you want to test out some store bought brands. Whatever you do, don't get Wilton. It is the most awful tasting stuff out there. No one I know ever uses it.

Yes, Wilton tastes the worst but they do say you can knead in flavoring. I have not done that yet. I would not buy a cake if I knew it had wilton fondant on it. Satin Ice tastes better than wilton, but its not fabulous. MMF is the best I have tasted. I have not tried the FondX, but look forward to!

If you go to Satin fine foods you can get it wholesale. It comes to $2 something a lb. You just have to get 40 lbs or more each order. HTH

I recently purchased and tried FondX. It is absolutely wonderful to work with, tastes great and can be refrigerated with no problem. You can purchase it at caljava international. You have to let them know that you are a professional baker.

I think I'm going to try the Sweet Inspirations Chocolate fondants. I'd love to cover my cakes in Chocolate fondant and use that as a selling point.

I use 5lb buckets pre made fondant from glacier. I wish I could make it myself but my hands won't take it. I can't handle kneading home made fondant. I'd rather save my hands to decorate with.
So all you ladies out there who are newbies save your hands don't get corpal tunnel syndrom.

Do you happen to have a website for them by chance? I haven't heard of that brand before. WHat is the taste like?

I use Satin Ice and FondX as well. I get Satin Ice from www.cakesbysam.com- ships fast and free shipping if you order enough. The FondX I got from Pfeil & Holing (www.cakedeco.com I think). They both taste good. FondX is better IMO. Satin Ice just comes in so many colors. I HATE coloring fondant!
