I made a fruit cake over the weekend. This one was the one with the whip cream icing , filling and fruits such as the kiwi, strawberries, grapes, pineapples, oranges and peaches which were on top of the cake. Yet, do anyone know what is the glaze that would go on top of the cake. I made this cake for someone and she love the cake, yet her previous cake( which was from someone else) had a shining glaze on top. Do anyone know what is was . I took a picture of the cake but have not uploaded it yet but there are several in the cake fruit gallery one just uploaded similar to the one i just made.
I was reading another thread this morning about making a gumpaste shoes shiny, like a patent leather look... and they were talking about something called a Confectioners Glaze... I wonder if that would work? *shrugs*
At the bakery where I used to work, we used a product called "Freeze N Shine". We mixed it with water and sugar and brought it to a boil then brushed it on the fruit while it was still warm. It took 3 coats, letting it set up slightly in between each coat. When the glaze cooled completely in the container we stored it in, it was a like a big block of Jello.
I looked at the ingredients one day, and it was just unflavored gelatin powder!
So to make your own at home, mix 1 envelope of unflavored gelatin, 1 cup of granulated sugar, and 2 cups of water. Bring to a boil and stir until all the sugar is dissolved. Then brush on the fruits with a pastry brush. Wait about 2 minutes and then do a second coat. Wait another 2 minues and do a third coat. Make sure to completely cover all of the fruit. The glaze will keep the fruit shiny and keep it from oxidizing (turning brown).
The unused glaze can be kept in the fridge and remelted any time you need to glaze something else. It stays good in an airtight container in the fridge for like a month.
