Hey Y'all! Our 10th wedding anniversary is coming up soon and I'd like to make my husband a special cake for the occasion. I'm not super fancy or talented at this cake-making thing, but I'd like to attempt something at least a lil' elegant. icon_wink.gif Here's what it needs to have in it: strawberry cake with fresh strawberries included in the batter, strawberry icing (frosting) also with fresh strawberries, and a filling....not sure what that would be. Any suggestions? These specific requests are per my husband... strawberry cake is his favorite. Any recipes, suggestions, ideas for decorating, etc... that y'all can give me will be much appreciated! Thanks! icon_smile.gif

Oh yeah... he also specified that he likes a rich, dense, moist cake as opposed to a light and fluffy cake. thumbs_up.gif

I use the Strawberry cake mix with an extra egg and a box of Cheesecake pudding added to it. Also instead of water I used strawberry pop for the liquid. It turned out great! I used it for the 3D Strawberry shortcake in my photos and it held up well. I also filled it with fresh strawberries mixed in with buttercream for the filling.

i don't know a cake recipe with fresh strawberries (well, a good one anyway. the one i tried years ago sucked). but i made a box strawberry cake and filled it with a layer of buttercream topped with a layer of thinly sliced strawberries, and torted it into 4 layers. i also did that on the top, because it was just a "i want a yummy cake" cake, not one i wanted to decorate elaborately. it tasted awesome! i bet it would also taste wonderful to layer whipped cream and sliced strawberries.

There is a strawberry cake in the recipe section that is very good its the "strawberry cake from scratch", sorry I don't know how to post a link. You can make a meringue buttercream and mix in some mashed strawberries, it's so yummy! Fill the cake with plain buttercream and sliced strawberries. The icing will be a little chunky because of the fruit, you can puree it if you would like. To decorate the cake top it with some chocolate dipped strawberries.

Thanks so much, Y'all! blessBeckysbaking... there are so many yummy extra things thrown into your cake! I may have to try that. thumbs_up.gif The buttercream filling with strawberries sounds good, but what about another flavor of filling? Lime, white chocolate, anything?? Just looking for variations. Thanks again!

When I do strawberry cake, I make my standard yellow cake and replace the water with pureed strawberries ( I just put strawberries in the blender). I have to not quite double the amount of water to strawberries. In other words, my recipe calls for 1 cup water so I use a little less than 1 pound strawberries.

You know what would be a good filling with this...something with cream cheese. or maybe something with rum! mmm

white chocolate mousse with strawberries as a filling is so good! There are strawberry stands around me at this time of year, so I take full advantage of it. A few more filling combos I can think of are; Chocolate mousse, cream cheese, lemon curd, banana/cream cheese, berry-peach mousse ( blueberries, strawberries, and peaches pureed together;I got the idea for this from my favorite smoothie)

maybe a lemon flavor buttercream for a filling might be real good and to correct the amount of pudding use 1/2 a box not a whole one cake BC has pudding in it so a whole box is way to much

I plan on making a strawberry cake this week-end. My cake will be the White Almond Sour Cream Cake and I will use strawberry pie filling in between my layers with fresh strawberries sliced on top of the pie filling. I will have four layers and frost with buttercream icing.

thecupcakemom,

Jell-O brand makes a cheesecake flavor. I have bought it before for a trifle.
