Attention Cookie People I Need Advice Please

I want to experiment with decorating cookies and have never really done it before.
I have heard of using fondant to cover the cookies in. So...is this right...I just use the same cookie cutter to cut the fondant and place the fondant on hot cookies straight from the oven, or let them cool a minute?
What are the frosting options for cookies? I don't want a bunch of hard royal, maybe royal decorations, but not covered in royal. What does everyone else use?
I found the NFSC recipe is this the best recipe for a good soft cookie? Can you decorate a soft cookie or do they have to be crisp?
I love almond flavor in sugar cookies...how much of it do you use in the NFSC? (2 tsp?) What do you flavor your icing with. I've heard that the creme bouquet is good for sugar cookie icing. Does anyone use it?

i use butter cookies with toba garrett's glace icing. i like the almond too, so i put it in the icing instead. i still have yet to try the fondant or rolled buttercream on cookies. toba's dries hard enough to stack, but you won't break a tooth trying to eat them. good luck with your future cookies
The NFSC, depending on the thickness and how long you bake it, will cool with a solid outside and a soft inside. It is very easy to decorate. We ice and decorate the backside of the cookie....it gives us a smooth flat surface to work on. No negative comments about it .... we've seen a LOT of bakeries use this technique.
I use Toba Garretts Glace icing because it comes out so shiny. As for flavoring I use different flavored liqueurs like grand marnier, chambord, godiva chocolate, and peach schnapps. I use a little more of the liqueur than regular concentrated flavors like vanilla. They make the cookies really special and taste so good. Then the decorations are royal since I find toba's icing is just too soft.

If you like almond flavor, I think that you could just replace the vanilla in the recipe with almond extract....
