I have a basketweave Grooms Cake due on Saturday - the cakes are in the freezer - is Thursday night too early to begin icing and decorating? I work full time and really don't want to be up all night Friday night !!

i think it'll be fine. i've decorated cakes two days in advance before and the cake was still moist and fresh. (although, i admit, it was using fondant. i haven't tried it with buttercream. but i bet if you keep it in the fridge it'll be fine)

I do a lot of my decorating on Thursday for Saturday pick-up/delivery. Most of my cakes are bc. I keep them in the fridge and they stay nice and moist. The crisco/butter in the bc helps lock in the moistness. Just make sure to cover your board w/something that doesn't absorb, but you should always do that anyway! icon_wink.gif
