Hello All,
I am needing a good cherry cake (flavor) for a cake I am making. I prefer to have a cake with no actual cherries in it if at all possible. Thanks in advance for your replies.
Curious if what you came up with....the only thing that came to my mind was to use some cherry liquer in place of some of the liquid in whatever recipe you use. You could also add cherry jam/jelly to your buttercream and use that for a filling. Sorry I couldn't be of any more help!
Also, let me extend a big warm welcome to Cakecentral!! ![]()
not sure how good it is. came from Betty crocker
Cherry Cake
1 cup Gold Medal all-purpose flour
2/3 cup sugar
1 teaspoon baking powder
1/2 teaspoon salt
1/3 cup shortening
1/4 cup milk
2 tablespoons maraschino cherry juice
2 egg whites
8 maraschino cherries, cut into eighths (if desired)
Heat oven to 350°F. Grease bottom and side of 8- or 9-inch round cake pan with shortening; lightly flour.
In large bowl, mix flour, sugar, baking powder and salt until combined. Add shortening, milk and cherry juice. Beat with electric mixer on medium speed 2 minutes, scraping bowl occasionally. Add egg whites. Beat 2 minutes. Fold in cherries; pour into pan.
Bake 30 to 35 minutes or until cake springs back when touched lightly in center. Cool 10 minutes; remove from pan to wire rack. Cool completely, about 1 hour. . Spread with frosting.
Thanks to everyone who replied. I wound up using a Duncan Hines white cake mix and added a Cherry Flavoring from my local cake supply shop. It turned out fabulous and very tasty! Unfortunately, white mixes are not myu favorite to bake with and do not work well with any type of Character cake pans (my project was a Care Bear for a birthday party). I had cracking issues but was able to save cake with some creative icing repairs. Thanks for the repies and I plan to try the cake recipe as well.
