Ganache Questions

Hi, I have long been an admirer of CC and earlier this month finally got registered as an user. In the past, I have had many questions concerning cakes (my love, as I suppose everyone elses) and always seemed to find the answer right here amongst these posts. (great job, if do say so myself thumbs_up.gif ). Now I have an inquiry of my own, I am attempting a ganache covered cake for the first time and I'm quite excited and scared at the same time. It will have buttercream decorations on top of the ganache and I was wondering if anyone knew the time frame between the first ganache application and the initial piping. Also, (and perhaps most importantly) I need a recipe icon_wink.gif ! I have never done ganache before and was hoping someone might be able to point me in the right direction as to a great tasting yet stable ganache. (I don't want the buttercream to slide off - this is what is in my nightmares) Thanks to everyone for their help and such a wonderful and informational site. icon_smile.gif I look forward to many more conversations with all. Here is the ganache recipe...

1/2 cup heavy cream
8 ounces good semisweet chocolate chips
1 teaspoon instant coffee granules

Cook the heavy cream, chocolate chips and instant coffee in the top of a double boiler over simmering water until smooth and warm, stirring occasionally.

I let it cool for a little while then when it was spread ing consistency I just spread it on. It was warm, not cold, but not hot.

I have a pic in my photos of a cake I made using this recipe. It has raspberries on top...

I'm so excited to try your ganache and have one question- the coffee, you can't taste it right? - it just enhances the chocolate flavor, am I correct? Thank you again for your time! icon_smile.gif

yeah, you won't be able to taste the coffee......I think it just helps the deepen the flavor of the chocolate....makes it yummier LOL
