I am using the sour cream buttercake recipe from the cake bible, can anyone tell me why it came out dry? I followed the recipe to a T.

i've made a butter cake from the cake bible, and it was also dry. (followed all directions exactly). i think its just that "from scratch" taste that im not used to . i like the enhanced mixes where you really get some moistness.

Overmixing and overbaking are the two most likely culprits in a dry cake. I have never had trouble with Rose Levy's recipes. Also be sure to measure your flour after you sift.
