Pls Help! Fondant Roses, For Wilton 3 Class.

I have my final cake coming up for Wilton 3. My teacher is not very good at all (I took 1 & 2 seven years ago with a different teacher) and only showed us the rose through step 2, and hers looked awful, like a tulip. Is there anyone who can give me pointers on this? I know for gumpaste you use different cutters, but for the fondant rose in course 3, you use the large cutter that is all one piece, and cut into the piece a bit to get distinct petals. First off, my bud seems too small to wrap those petals around, but I am going by what the book tells me (to use the mini cutter cut out of 1/4" fondant) and once I get to the third petal arrangement, they seem too small for the rose, like the center of the rose is too high and the outer petals are too small. Just not nice. I am improving, but need help! Oh, another thing, my buds have dried on the toothpick for over a week, but they come off the pick before I'm done, then I have no way to support my flower. How do you support these as they dry anyway?!? Help!! ![]()
One tip my instructor gave me was to use a jelly bean (jelly belly size)for the center. It might help give you a little more support.
I always have my students do the fondant/gumpaste blend for the roses. When you roll out the fondant/gumpaste, and you think it's thin, thin it out some more. The petals have to be very thin or they will look like tulips. I keep my petals in "Glad" Press and Seal wrap while I work the other petals. Good luck.
Our instructor also had us add gum-tex to fondant to help dry faster and make stiffer also when putting center on toothpick she had us dip the toothpick in a little gumtex mixed with water (sorta like glue)helped keep center on toothpick after dried. I had trouble with the center petals being to high when I made the base to wide or if I didn't center toothpick correctly in petals. HTH
