im making a cake for a family party with a filling that uses whipped cream and cream cheese. i plan on refrigerating it as long as possible, but the party is about an hour drive from my house, and once im there it may sit out for another hour or so before anyone eats it. will it be okay? how long is it safe to leave those kind of fillings at room temp? also, if its nice weather, we may eat outside, would the filling hold up in potentially 60-70 F weather?

thanks! im still trying to sort out how long some fillings can sit out.

My suggestion is: If the icing is buttercream you might want to freeze it. When it is time to cut the cake it should be thawed.

It is absolutely positively safe to let it sit out that long at room temp.
