most duncan hines mixes don't have milk in them. (pretty sure the white cake does) if you want to make a scratch cake, i'd just use soymilk instead of milk in your recipe. and of course margarine without milk. surprisingly, most margarines have milk in them.

Hi
I actually just got back from the store about 10 minutes ago!...I looked at every cake mix I could find for no dairy/milk. I finally found Duncan Hines Moist Deluxe Classic Yellow Cake. It has no dairy. (My daughter has a milk protein allergy and can't have anything with any dairy in it.)

As far as frosting, I haven't found a commercial one yet. I did find the following recipe online, but have yet to try it...

Banana Frosting-Dairy Free
2 tablespoons dairy-free margarine, softened
1/4 cup bananas
1/4 tsp lemon juice
1 1/4 c. confectioners' sugar.

Combine ingredients, beat until smooth. Frosts 9 inch layer cake.

Hope that helps icon_smile.gif

Ingredients:

1½ cups egg whites
½ teaspoon cream of tartar
¼ teaspoon baking powder
1 teaspoon vanilla extract
½ teaspoon ground cinnamon
¼ cup rolled oats
3 ripe bananas, mashed
1 cup cake flour
2 cups confectioners' sugar
¼ teaspoon salt

Method:

Preheat oven to 165C.

Beat egg whites until stiff but not dry.

Combine cream of tartar, baking powder, vanilla, cinnamon, oats, and mashed bananas. In a separate bowl combine the flour, confectioner's sugar, and salt.

Fold the banana mixture into the egg whites. Then fold the flour mixture into the egg white/banana mixture.

Pour batter into one 9 or 10 inch round cake pan, coated with a non-stick cooking spray.

Bake for 1 hour, until cake is firm and lightly golden.

Cool for five minutes then slip out of pan on to a serving dish. Garnish with a light dusting of confectioner's sugar.

I made this cake for my dd's first birthday. She can't have any milk or soy, so it's rather difficult to feed her. It had been suggested to me to use the creamers in place of milk, but they have a milk protein in them also. I just found this out, so I can't even use creamers for her. This cake was really good.
