Ok so I had a 2 layer round cake due Friday for a birthday party. Well, I got a call today from the mom and she has tonsilitis.... party cancelled.
I already baked and iced the cake (no decorations yet.. plain), can I freeze it? it does not have any fruit in the filling or anything. Will it affect the cake at all?

I use the 3 gallon size zip-lock type bags. Slip the crumb coated cake in there and it can be frozen for weeks. Have used two of these end to end for a half sheetcake and then used wide tape to seal the edges where they meet. I cut off the zip-lok part for the sheet cakes so it won't damage the icing... I support them on cookie sheets/jellyroll pans
My wilton instructor puts her iced tiers in the freezer with no covering for a few days.............says it's not a problem. I thought it would dry out~ but I promise you she's a perfectionist and would not compromise on her cakes. I just think she doesn't have any ocean perch or catfish in that freezer! Just cake!!!!

Have you guys tried those extra large zip-loc bags? They even have XXL. Those things can hold several sheet cakes! They are wonderful!
