im having trouble decing what to use as my filling with this cake. its a chocolate mix with cherry pie filling blended in with it (recipe from cake mix doctor) and im using ganache to ice it. i've considered using cookies & cream filling, cream cheese filling, or just plain old vanilla buttercream. what do you think would go well with it?
how about more ganache?
I also thought about that! using a whipped ganache, but i wondered if it would be "too chocolatey" if ya know what i mean....
whipped MILK CHOCOLATE ganache is much lighter and fluffier than dark, bitter or semi sweet ganache, as well as a more mellow flavor. another nice filling would be whipped cream or cherry pie filling. i would keep with the flavors already there rather than adding in another, keep it simple and it will be delicious.
I agree with the above poster, but if you want to use a ganache that will set suitable for a filling, bring 1/2 cup heavy whipping cream just to a boil, remove from heat and stir in 14oz choc. stir till melted, set aside to chicken and cool. Make a dam on your cake then add ganache. It is really good and when its cool, its like a fudge consistancy. This would work great for your cake.
