I am searching for some filling recipes that do not require refridgeration. I am doing a 50th anniversary in a few weeks and the cake will be picked up a day in advance.

I still haven't discussed flavours, etc. so any type of recipes would be appreciated!

You can flavor your buttercream with different extracts or you can use the fillings that come in a sleeve as they do not require refridgeration and come in a wide variety of flavors.

You can also do fruit preserves or jams, thick ice cream toppings, jarred lemon curd and nutella.

Most of your fillings that you make will need to be kept in the fridge.

I like the fillings from the sleeves and I also LOVE using Pastry Pride or Rich's Bettercreame as fillings. I've done the Cookies & Cream filling using Pastry Pride instead of whipping cream and everyone loves it.

You could whip a rich chocolate ganache, nearly everyone loves chocolate. You could enhance the flavor as well with a liquoer (sp?).

okay, i've really wanted to try the pastry pride, but where can i buy it? do most cake decorating stores carry it, or can i get it at the grocery?

Thanks for filling me in dodibug. Do they taste okay? I have a client who wants "some kind of filling" in a cake that will be on the table for a while in the summer. So I'm glad this question was asked.

I'm kind of a filling snob since I like to make my own icon_lol.gif but sometimes that just isn't realistic like your summer situation. They are pretty good. I have used raspberry, strawberry and bavarian cream.

Some cake places carry pastry pride or rich's bettercream but not all. I know sugarcraft.com carries bettercream.

...but it sounds like even the 'sleeves' have to be refrigerated after opening...so maybe there is no way around not having to refrigerate unless ya tort with just regular bc???

I just looked on sugarcraft.com and they said it doesn't have to be refridgerated once on the cake because of the preservatives. Refridgerating the sleeve after it is opened prolongs the shelf life.

Oh...ok...I think I read it wrong the first time....it keeps for 6 months in the cupboard AND 6 months opened in the fridge.....got it!!!

sleeved fillings are shelf-stable for 5 days...you can leave your finished cake out of the refrigerator for that long without spoiling.

I love the sleeved fillings, especially the lemon...it tastes like lemon pie filling! The raspberry is also very good...
