Cheesecake Woes. . . .

I am making a cheesecake and I would like to remove (once baked) it from the entire spring form pan, including the bottom and place it on a cake board. Does anyone have any suggestions on how to do this w/o destroying the cheesecake? I've tried a couple of different things and both times the cheesecake ended up in shambles.

Place a cardboard circle already in the springform pan that's covered. No worries then about having it crack when putting it on a cardboard round because it will already be on one.

Have your tried putting into the fridge so the crust would harden?

we used a torch to heat the pan and the cheesecake removed easily feel right out. We put it in the fridg over night so the bottom would set before removing from the pan.

Midgit1205--Do you bake your crust before putting in the cream cheese mixture? That's what I do and I've never had a problem. Just bake about 10 and let cool before pouring in mixture.

Also, I spray grease the bottom of my pan. Then upon removal I slide a thin spatula under the crust to loosen it and it slides right off icon_biggrin.gif HTH K'ly

You need to line the pan. The cheesecake will come out perfect every time. Wrap Reynolds non-stick foil around the bottom of the springform base before you assemble the pan. Then put the pan together, cut parchment strips slightly taller than the sides of you pan, and line the inside. Then put in you crust and blind bake. Make sure you cool you cake completely before unmoulding.
