Someone posted a recipe for easy lemon curd some time ago and I did try it and it came out wonderful. I've lost the recipe so if anyone has a easy lemon curd recipe would you mind sharing? Thanks.

I found it! It was on the FINE COOKING.COM This curd does turn out really nice. 3oz.(6TBS)unsalted butter...room temperature.....1 cup sugar...2 large eggs...2 large yolks... 2/3 cup fresh lemon juice....1tsp. grated lemon zest.

I'm just wondering, what kind of cake do you put lemon curd on? It sounds good, I'd like to try it. I would assume it would be good on a white cake, any other suggestions?

I first used this curd to make Toba Garrett's lemon coconut cake. But I use it as a filling for white or lemon cake. Plus you could also makes lemon tarts or lemon bars.

Anything lemon goes with. Lemon cake, white, butter, yellow....
