i am making my daughter wedding cake for her, its april 7, and she is wanting 14,10,8,6. take in mind this is my first wedding cake (really first really important cake.) its on sat. My question when should i bake the cake and icing. and which icing would everyone prefer. She really doesn't care much for fondants. thanks in advance and im sure i will have more questions. again thanks.

I bake as soon as I possibly can even as much as a month in advance. Wrap and freeze. The hotels, grocery stores and bakeshops freeze a lot longer then that , so don't worry. Cut your tiers while they are cold firm. It makes it a lot easier to crumb coat. After final icing , I wait until the BC softens at room temp. before inserting columns. If too cold , the BC will crack. Good luck, hope that helps.

Do you have someone who can take care of setting it up or at least help you the day of the wedding? As the mother of the bride, you're going to have a number of responsibilities. I'd recruit a trustworthy helper for this very important day!

Been there .... dun that .... ain't doin' it again!

yes my sister and other daughter will be helping do the food and decorating and helping with the cake.

see if you can go the day before to set up...when I did my daughter's cake, it took much longer than I thought. At least the day before you're not stressed so much about time....

and I second the idea of freezing everything...includeing the icing! I just used a regular buttercream with half butter/ half Crisco. look under the recipes on here if you need one.

HI the wedding went great, and the cake turned out prettier then i thought they would.(still no pro) they was happy with them, i will post the cakes as soon as my daughter e-mails them to me she the one with the camera.we had alot more people show up (then we thought would which was great. Was stressing over the food but had plenty, Im really glad its over, and thanks for cc for all the great tips and advice i received her and again i will post the cake, Im gonna call her now so she can e-mail them to me. thanks again everybody.
