Filling Cupcakes

I am decorating cupcakes for a babyshower. They will be covered in fondant. They are the sleeping babies cupcakes. I am thinking of filling them. Do I just stick my decorator tip in the top of the cupcake and squeeze some filling in there? What tip?

I am making raspberry cupcakes and lemon cupcakes. Do I fill them with plain preserves or mix it with something? If yes, what do I mix it with?

Sorry for all the questions. I have never filled cupcakes before and these are for my best friends first baby and she deserves the best. I would also like to make them ahead of time and freeze them undecorated.

nutcase (great name btw), you can use a Bismarck tip 230 or even your largest round tip (really large too) to fill them with. you can flavor whipped cream with chocolate or fruit or use lemon curd or fruit fillings, there are lots of these types of recipes in the forum recipe thread. Any filling you use in a cake you can insert into a cupcake too. Just insert the head of the tip just into the top of the cupcake, squeeze lightly and it will take a few practice tries to get it right but it will come quickly.

I use my large round tip with no problem. There are lots of fillings you can use, I use depending of you cake and what you like. Stick the tip in and squeeze, you'll do fine.

I looked for lemon curd at Super Walmart and could not find it. I found Comstock Lemon pie filling. What if I made cream cheese filling and added some of that for the lemon ones and raspberry jam for the others? I got cream cheeze and cool whip. It was a simple recipe I seen on here. I just wondered about adding pie filliing to because it is not as strong flaavored as the jam. icon_confused.gif
My truck needs a radiator so I cannot go store hopping I am hitching a ride with the mom to be and I don't want to drag her everywhere looking for my supplies. icon_cry.gif

I dont see why your filling wouldnt work. Do you really need a very stong tasting filling? Go with what you have and you'll be ok. Good Luck.

I would add some lemon zest to the mix for a better lemon flavor.
