High Ratio Shortening???

What exactly is high ratio shortening and what are it's beneifits? I was just given 3 lb. tub and before I use it I wanna know what up with it. Thanks.

I just took a fondant class today and the instructor said she only uses the high ratio stuff. She said she likes it, because flower/tip work looks much smoother.
