Okay I searched the forums b/c I figured this must have been asked before but I didn't find an answer. I have a big ole bunch of frozen cream cheese icing. Should I defrost it in the fridge or just leave it on the counter to defrost?? I'm worried about it getting wet/liquidy just sitting on the counter......

I use an ice cream scooper and take out what I need and let it defrost in the bowl I am going to mix it in. I have never had a problem with it turning liquidy, I don't let it get too warm though. I just let it sit until it is soft.

I've done both, I've defrosted in the fridge and at room temp. Just stir it up and its as good as fresh.
