I am on a very tight schedule, so......................could I mix up my cake batter on my lunch break and put it in the fridge and then bake it when I got home tonight? It would be in the fridge for about 4 hours?

I read in the Cake Mix Doctor book, that it is fine to refrigerate cake batter. I think she experimented and left hers in the fridge for about 12 hours, baked it up and the cake came out great.

When I was a kid, I got an Easy Bake oven. My mom refused to pay the high prices for the easy bake mixes, so she bought me regular cake mixes and we kept it in a bowl in the 'frig for days. When I would bake, I'd just scoop out the batter I needed.

So for years and years, I've stored batter in the 'frig and never had a problem with it.

Thanks~ Speaking of easy bake ovens........I was going to get my niece one but her mom hates to bake so I think she would kill me or else not let her play with it which would be a waste of money.

Ask her mom if it would be ok, because no little girl should go without one. I remember mine, and I LOVED it.

I've also kept the batter in the fridge for a couple of days, and the cake turned out good, just as it was fresh batter.

sugarshane~~Already had that discussion with my sister and she said don't even think about buying her one. But that is how my bratty sister is. She doesn't like anything unless it involves TV. Unfortunately my little 4 yr old niece is starting to be the same way. She always has to be in front of the tv. Oh well~~ not a whole lot I can do but influence her in a good way.

I sometimes put leftover batter in the fridge for a small cake for my family.. usually no more than 48 hours though... might be too late, but hope it answers a question!
