I just can't figure out how many cups go in her recipe. It's 2.25 lbs and for the life of me I can't figure that out.

I think it is 9 cups. 2 lbs. is = to 8 cups, 1/4lb. would be equal to 1 cup, if I did my math right.

untlil you get a "feel" for the right consistancy, ALWAYS measure your sugar, because a bag of it is rarely 8 cups. It's usually 7 or 7 1/2. I learned this the hard way.

buy a scale, or else if you are using one pound boxes that will be 2 and 1/4 boxes, or if using 2 pound bags, it is one bag and 1/8 of another bag. It won't have to be perfectly exact. It is hard to measure powdered sugar, because you won't have the same amount each time, Powdered sugar can compact, so you can end up having more than you actually need. I hope that helps.
