I know that I have been hiding for a few weeks. Work has picked up and my apprenticeship classes are now twice a week instead of one, and I also started my Wilton courses YEAH!!! ![]()
I am so excited, I have been decorating for a couple of years and use to work in a grocery store bakery-where I was just limited to to little for what I wanted to know. So then I started learning stuff on my own-and everyone on here has helped me tremendously, whether they know it or not-I am always keeping up with post.
Finally Wilton course are being offered in my town (so i don't have to drive an hour) So this last week we did the gel transfer-I couldn't believe I had never tried this before. It worked great!! I love it. I have a cake due this friday that I am going to use it on for a company logo.
I am glad to be taking these classes finally-i feel I already know a lot of stuff in course 1 however I am still being a good student and following everything to the book. I decided to make the class buttercream so I could understand the different consistancies (and once was enough, I will be going back to my other icing-however now I know what consistancy my regular icing is
) And I have a great teacher who hasn't taken any offense to other suggestions about the way we do things (many of which I have learned on here-so you guys make me look so smart HAHA)
Anyways-The cake is my photos-it is to large to post in the forum. The Rose cake I did with the gel transfer-we had class on valentines day so we all brought in different pictures relating to the holiday. I was trying to hurry fast so I didn't get the exact colors I was looking for on it. It was suppose to have darker color outline with a lighter color fill in. You can tell what it is suppose to be better in the picture than you could in person. It also cracked on the side because it was moved 4 times-a total of 3.5 hrs in the car, so I need to work on keeping down the movement ![]()

Your transfer came out great! I am going through the Wilton Courses right now as well and really enjoying them! I am midway through the second course. I also was self taught before taking the courses and found the first course to be pretty repetitive of what I already knew, but still fun! There is always a way to make the technique more advanced. Like I see you added cornelli lace and a reverse shell border to your cake, which you don't learn until later courses! The classes get better as you go, so keep it up! I am learning all of the flowers in course 2 and loving it!

I can't wait until course 2 and 3. I have been wanting to learn flowers in BC and gumpaste and just don't have the time. That's what I like about taking the classes. It forces me to make time! And I can't wait to learn more about fondant. i have played around with MMF and can't wait to learn some more techniques.
