Chocolate Wrap For Cake - What Kind Of Chocolate?

i have tons of candy melts at home, different colors - so i thought it would be nice to try. But i read in a post that it's not too good, cause it settles really fast. That can cause cracking and not be able to wrap the cake. is this right?
Ok so what kind of chocolate can i buy? there's a store near work that sells a lot of chocolate (nycake.com - they sell cake deco stuff). I see that they have a lot of bags of what looks like candy melts. But packaged seperate, not in wilton bags. is this the same as chocolate melts?
Can i buy Hershey's, Ghirardelli chocolate chips and do the chocolate wrap? if so can i also color white chocolate? with what?
is being the chocolate baking bar better than the chips?
should i use a double broiler to melt the chocolate? any other tips?
If i can use something that's sold locally is better. cause i want to try this wknd.

Kat here is a link to a tutorial. I use Guittards chocolate chips with the addition of vegetable oil to give the chocolate some flexibility and shine. You can use whatever chocolate you like, I have just not tried candy melts myself.
