Does anyone have a guideline for the refrigeration of buttercream icing that contains real butter and/or milk? I have no issues leaving a shortening-based buttercream at room temp; do I need to be concerned about the butter? How far in advance can I make butter-based buttercream?

butter can be left on the counter, so I don't see why the buttercream would be an issue. i wouldn't leave it out for days and days at a time, but 1-2 days isn't an issue, IMHO

According to the cake bible, her buttercream stay 6 hours out in the open, 1 week in the fridge, and 8 months frozen. Her icings also have eggs in it.
