? For Those Who Decorate Cakes With Royal

I do a lot of fondant & gum paste decorations but would like to try royal as well. The problem is that many of my cakes are picked up the night before & most of the time the cakes need to be in the fridge.

-Is there anyone who regularly refrigerates cakes with royal decorations on them with no problems? Will decorations that stand up vertically, like an initial, or whimsical squiggles wilt? Will they bleed?

For example, if someone wanted a tiara of royal icing, would that work to be on a refrigerated cake overnight? Thank you!!

I haven't done this. But could you just put the cake in the frig and add the tiara at the last minute? That way you wouldn't have to worry about it falling apart. I am not so sure about one covered in flowers.

Thanks, my dilemma is that I often have people pick a cake up either the day before, or many hours before their event. No problem if the cake doesn't need refrigerating, but my most popular cakes do.

Just hoping to hear that there are people who refrigerate cakes fully decorated with royal without problems. We'll see... I may just have to do some experimenting..

I have never had a problem refrigerating my cakes with royal. In fact I keep my RI decorations and flowers in the fridge till I need them. But I have had no problems with bleeding if kept on the cake and in the fridge.

You could always test it, a little bit of icing on a plate with a decoration just to see how it goes in your frige.

Don't know if this helps but if you look in my photos of the Gasparilla Pirate cake, the royal icing fences was put on the cake 36 hours before it was being served and it was in the refrigerator for about 30 of those hours with no problems.
Oh yeah, I forgot, I put RI shamrocks on a cake last night that she picked up this morning at 7AM. Again, no problems........

I have decorated cakes with royal icing flowers and refrigerated them no bleeding happened
