Need Help With My Own Wedding Cake!!!

I am relatively new and have only done birthday cakes. I wanted to make my own wedding cake in 3 weeks icon_eek.gif . Any ideas??? I was thinking of using the sour cream recipe from here for the cake, but not sure what filling to use. icon_cry.gif

I also was going to use BC for the frosting but I can never get it super smooth any suggestions I use the viva paper towel method. I have only tried the wilton fondant and it tastes horrible!!!! Any suggestions greatly appreciated icon_biggrin.gif

The white almond sour cream cake is very good with raspberry preserves, but just about any filling is good with it. You can use different extracts to change the flavor if you would like to do that. For the buttercream let it crust well, then it should smooth out for you, or you can use a hot knife to smooth out your buttercream ( that's what I do) You can do a basket weave on the sides of the cake and that way you don't have to worry about smoothing it out. If you want to use fondant, I just tried Satinice for the first time, it was so good! Pettinice is also good if you can't find the other. You can make your own Marshmallow fondant, but I prefer to buy it already made. You are probably going to be very busy the day of your wedding so keep decorations simple, maybe some flowers that match your bouquet, or ribbons around the cake. Congratulations on your wedding!!!!

MY ONLY SUGGESTION IS NOT TO DO YOUR OWN WEDDING CAKE!! I HAD THE SAME BAD EXPIRIENCE IN MY WEDDING AND IT WAS HORRIBLE AND THAT'S BECAUSE I PLANNED DAYS BEFORE. IT WAS SO NERVE RACKING. WHAT YOU SHOULD DO IS ENJOY YOUR DAYS AND RELAX AND PAMPER YOURSELF. NOT WORK. YOUR GETTING MARRIED...ENJOY THE FEEL!! BUT IF YOU DO WANT TO DO YOUR CAKE HAVE SOMEONE HELP YOU OUT. I DUNNO MHO.

Congratulations! I think it would be exciting to make you're own cake, you're getting exactly what you want. Like neni said, raspberry goes great with the almond cake. As does any type of chocolate ganache. The new trend I've been seeing is the "spackled" cake look, so it doesn't have to be smooth. You can make it uneven on purpose to give it that look. If you're adding flowers, etc, it looks pretty cool. If you're using crusting buttercream, you can use the viva method, it's the same as it would be for birthday cakes. Do what you're familiar with. Look at this site and see what you think about trying this method of smoothing out your buttercream. Works wonders for me. You are tackling a big job in doing your own cake. Are you having a big wedding? If I did my own cake, I would keep it rather simple. I did an anniversary cake and rather than stack it, I used the Wilton 3 tiered stand and it worked great. That way there was no assembly necessary when it got there other than putting some floral pieces around the bottom of the stand. You can see it in my photos.

Good luck with doing it. If you decide not to, you don't have much time left to find someone else.

I made my own cake (twice) Cake choice #1 was good, choice of husband, not so good. LOL.
I wouldnt suggest it, but if you really want to, definately keep it simple. Plan ahead, and take an asprin first thing on your wedding day. Seriously.
I had a major headache(s)!

Thank you so much for the ideas, I will keep it simple definitely with all the other stuff I have to worry about. Where can I buy the satin ice fondant since its sold out here?

I will probablly put the satin ribbon around the cake to match the wedding colors like that idea. I will be doing a practice cake this week. I hope all turns out well. icon_lol.gif
