I went to World Foods for the first time today. Amazing! Found some 99% Dark Chocolate. I love 70%, switched to 85%, and had to try this 99%. YUCK!!! Baking chocolate, basically. NOT worth $4/10 oz bar. I don't want to throw it out (it's chocolate!), so what to do with it??

Can you use it in a recipe that calls for baking chocolate? I make a flourless chocolate cake that calls for both unsweetened and semisweet chocolate. I usually use the Lindt 85% for the unsweetened chocolate in the recipe.

i know what you mean, its pretty strong stuff! you can add some milk chocolate to it for making frostings, ganache, etc. we do that at school alot. it will just make it sweeter.

The higher the %, the less there is of sugar, the bitter the chocolate tastes. That's not to say that it's not a good chocolate, it's just that most people don't find the taste desirable. If it's a good quality chocolate, definitely don't throw it out. You can combine chocolates to get an amazing flavor. Chocolatiers like Godiva, Moonstruck, etc. do this to come up with their signature chocolates. I would use this as an opportunity to experiment.

Mixing chocolates - yummy! I've been meaning to make some truffles, might have to try that. I got the Cherry Cordial mold (tiny truffles) http://www.makenmold.com/Create/HowTo/Candies.aspx and perhaps the size would be good for a rich chocolate, something too dark for larger bite. Thanks!

Gosh seeing the price of dark chocolate is a shock. I guess I will have to bring a bunch back with me from France since its only about 2.50$ canadian for 99 percent chocolate.

Yes, the 99% was $4, where the others were $2-3. It's pricey, LOL, but I don't plan on buying that % again. Usually I'll use 60-70% as most people don't like it too dark.
