Icing Questions!

Hello everyone! I just got a call tonight to do a 1st birthday cake. They would like a smash cake also and she has requested 'not too sweet' icing for this cake. Any ideas on a not too sweet something like buttercream?

Also - the Buttercream dream - does this need to be refrigerated? is this less sweet than traditional buttercream? Can I decorate with it - stars, borders, etc?

Hmmm..I'm not too sure what to tell you. I also had a customer tell me they didn't like really sweet icing. I usually use buttercream dream, but I use all salted butter and it seems to be a little less sweet than the regular wilton crisco bc.

The Swiss Meringue and Italian Meringues are not overly sweet, and also I think there are some whipped icing recipes on here. I'm just not too familiar with those myself. Hopefully someone else who has more expertise can help you out better!!

Do you have a local bakery that will sell you some of their "Whipped cream icing"? I have use the one from "Dawn" foods. I think it is the same one that Wal-mart uses. It is very good and not too sweet. I know the Wal-mart here sells their icing. If you are near a Sam's that is even better, they sell the same stuff that Wal-mart uses ant a MUCH!!! cheaper price.

What is buttercream dream and where can I get some or a receipe to make some?

I use the Wilton one with
1 Stick butter
1/2 cup shortening
1 tsp of clear vanilla
4 Cups of powder Sugar
Little milk

I like this one, to me it is not very sweet at all. It is one that I actually eat.

Like I said, I use all salted butter and I use heavy cream instead of milk if I have it, that isicon_smile.gif

Julisa-I was wondering what the name is of the whipped icing you mentioned that Sams carries..I would like to try it and I go to Sams about once a month, but have never looked for anything like that. Thanksicon_smile.gif

I don't know the name of it. I just go to the bakery and ask for it. You'll have to make sure they understand that you want the whipped icing not the buttercream (I've bought that in vanilla and chocolate also) I don't remember how much it is, but the buttercream is like $27.00 for a 28lb bucket. I love this because it HATE!!! to make icing.

Thanks for all your replies. Thanks for the suggestion of checking at my local bakeries - although that's why she's ordering from me - she wants everything homemade. I'd be curious if they sold the whipped icing though and I'll definately check into it. I will also try making a batch of the buttercream dream - does this need to be refrigerated because of the milk?
