I need some coconut filling and the shop where I usually buy fillings don't carry this one. I don't need much so it has to be a place where they don't have minimum amount of $ to be able to shop there. Thanks.

Country Kitchen Sweet Art

www.countrykitchensa.com

I checked their website before I posted, so I know they carry it.

I had this same situation a couple of months ago. What I did was I took a bowl of coconut dough candy filling, nuked it for a 20 seconds, just to soften it, then beat it into my French Buttercream. It was the best coconut filling I ever had. Tastes just like a Mounds bar. I won't use any other coconut filling now.

Coconut dough is candy filling that is sold in a tub. It is quite dense, so it needs to be warmed slightly to soften, or it will turn to large lumps in the icing. The trick is to not warm it more than it needs, or it will melt your buttercream.

I used 1/3 tub, warmed it for 20 seconds, and then added it a spoonful at a time, after the butter but before it was done beating up. That amount flavored my French Buttercream perfectly, and my FBC recipe fills my 5 qt KA about 3/4 of the way full.

They sell it at Country Kitchens, also.
