How do you do the Viva paper towel method and is that preferred over parchment paper?
What is crusting BC? Any recipe ideas?

i've never used the viva paper towels, but as i understand it after your icing crusts just lay it over the icing and smooth it lightly. bc will crust because of the sugar to shortening ratio. i use "buttercream dream" recipe off this site, and it crusts well. the wilton recipe also crusts well, but its pure shortening, which some don't like the taste of.

After your icing has crusted a bit just put a viva towel on it and gently press down and smooth with your hand or a fondant smoother. As for the icing......I always use the wilton's recipe only I use all crisco and don't use meruinge powder.

I tried that once and had to end up consoling myself with the fact that at least I had a new roll of paper towels.
