What Is The Best Way To Store A Cake?

I am going to start making a Dora birthday cake for my daughter's birthday party on Sunday (she's turning 2). I know that it'll take a while with all the detail that goes into it. Should I start it on Saturday and store it in the fridge or freeze it until Sunday? Also, any suggestions on how to make the frosting as smooth as possible will be greatly appreciated!!

If you are going to bake it one day and frost it the next you don't need to do anything but wrap it after it cools (in saran wrap). I never like baking one and decorating it the same day....to fragile!

Personally, I bake ahead of time because I have a FT job. I bake during the weekends and freeze them and take them out couple of days before they're needed. A day before I torte and decorate. If you start baking on Saturday, it's okay for it to stay in the fridge (wrapped properly in Saran). I've also decorated 3 days before it was due and didn't have a big enough box to cover it so I left it unwrapped in fridge. It still came out most thumbs_up.gif

There are different techniques on how to smooth icing. A lot of people use a crusting buttercream and smooth with either wax/parchment paper, Viva paper towel or the Melvira method. There are recipes on here for crusting buttercream. Let me know if you need any more help on this.

Are you making a sheet cake with a Dora on it or do you have a Dora shaped pan?
If you are going to be using BC, use the crusting BC, let crust and then gently smooth it with a Viva Paper towel.

I would definitely start it on Saturday. At least bake it. What I do is bake my cake a day ahead of time. I let the cake cool in the pan and after it's cooled, I wrap the whole thing cake inside the pan with Saran Wrap, very tightly (airtight). I don't put in the frig or freezer. Just in a cool place.Then when I'm ready the next day,I just cut the saran wrap off, and decorate as usual.
For smooth frosting I use the Viva paper towel method. Works great all the time......

I bake my cakes the night before I decorate. Just after I have taken it out of the pan, I saran wrap it......even while it is still kinda warm. Then I place inn fridge and while it is still chilled I torte it. I also use the viva paper towel method......works great!

Wrap it warm, pop it in the freezer!!! It makes the cake super-moist and really easy to work with!

I wouldn't freeze it since it's only a couple of hours from baking to serving time, so I'd do what the poster above me said- I'm sure the cake would stay very moist! thumbs_up.gif

Thank you for the ideas and tips. I'm using a Dora cake pan. Will I have time to get it all decorated before the time of the party (starts at 3pm)? I was planning on using BC for icing.
I could use some help with crusting the BC and the Viva paper towel method.
Would it be alright if I bake the cake on Friday, cool it overnight and then decorate on Saturday? If I did that could it be stored in the fridge until Sunday?
This is the first time that I've decorated a cake like this...can you tell!?! I appreciate all the help I can get!! icon_biggrin.gif

You could bake it Friday, decorate it on Saturday and probably just leave it out until Sunday. I never freeze or refrigerate and mine are always fine. But if you bake Saturday night (and get all your icing made and colored too), you'd probably have plenty of time to decorate on Sunday.

Oh, and on smoothing, I personally prefer using parchment paper instead of the paper towel method. Works the same way, you just use the parchment paper instead.

seriously - just wrap it well and it will be fine on the counter. or in the oven (just don't turn it on!)
