Well, I'm a big fan of a nice thick cookie. I made one batch of NFSC today for an order of 24 shamrock cookies. That's all I got out of the one batch, 24 cookies. They are 3" shamrocks and I made them 3/8" thick. They puff up a bit to almost 1/2" thick! I think for what I'm charging, that my customers deserve a thick cookie. I don't know. I'm still making a profit from making them this thick and it still takes the same amount of time to decorate no matter how thick they are, but I'm wondering now if that is too thick. LOL! Of course they are taking twice as long to bake now too. Oh well.
Any thoughts?
I guess I'm not so good at math....I just measured my baked cookies and they are almost 3/4" thick!
I also think that the customer deserves more for what they're paying, a 3/8'' thick cookie sounds good, I made them like that for bouquets, but I was making samples for favors and 1/4" thick looks too small (to me). The 3/8" looks better. Even withouth the stick.
For all my cookies I purchased two dowl sticks 5/16"...... in the craft dept. at Wally World. Cut them to the length and width to fit the area I work with, and that has been the only guide I have ever used! Uniform cookies every time! HTH!!!!
P.S-- This does produce a thick cookie! For a very large cookie (like the large tiara) I have to roll them thinner if I am going to put them on a stick, however; if I leave them on a platter, I don't adjust!
I also use 5/16" dowel rods as a rolling guide. I think this is the perfect thickness (for me anyway, and everyone else thinks they taste great too).
