Rum Cake Suitable For Carving & Stacking

I'm doing a whimsical, carved, 3 tier, b'day cake 6, 9 and 12 inches and the client has asked me to make a traditional rum cake filled with chocolate ganache. I don't have a recipe for rum cake and after searching online this afternoon I'm a bit stuck
She wants the sort of rum cake without any fruit in it - I'm thinking she means the Tortuga style - which I understand is usually baked in a bundt pan, soaked in rum syrup while warm and is very delicate - more of a dessert cake than one suitable for stacking and covering in rolled fondant.
Does anyone have any suggestions/any good recipes for rum cake that would be firm enough for carving and stacking?

Hi Nic, I make rum cake, I make my usual butter cake and soak it with a rum syrup and fill it with pastry cream, my family is cuban and they love rum cake that way. Its not a good cake for carving, because its very moist, so it would not be suitable for a whimsical cake. You need a sturdier cake for a whimsical cake, definately one thats not wet and will go slipping around.

I had to do an Italian Rum Cake recently. It turned out to be a Sponge Cake soaked in a Rum syrup. I must have tried 5 different recipes before I found the right one. I finally called my cousin's wife who is an Italian from NYC. She called her cousin who owns an Italian bakery in NY and he gave me the recipe. (I tried one of the other recipes 3 times before I decided it was impossible to make the way it was written. I ended up losing money on the cake, just because of how many recipes I tried to begin with!) Anyway, the one I used definitely wouldn't work. But in searching for the recipe I found a delicious one that is quite dense. It is a Neiman Marcus Rum Cake. Unfortunately I can not locate it at this time, but if you do a search for it I am sure you would find it. It was heavenly good! and dense. Just be careful DON'T use the recipe from Dee514. It is listed everywhere and I couldn't make it work to save my life.
