Here are some egg substitutes:
2 tbsp corn starch = 1 egg
2 tbsp arrowroot flour = 1 egg
2 tbsp potato starch = 1 egg
1 heaping tbsp soy powder + 2 tbsp water = 1 egg
1 tbsp soy milk powder + 1 tbsp cornstarch + 2 tbsp water = 1 egg.
1 banana = 1 egg in cakes
If you're using a boxed cake mix, you can use a can of diet soda instead of the eggs, water, and oil that the box calls for. I add a box of sugar-free pudding, some vanilla, and have a moist, dense (and egg-free) cake. I'm not sure if there are any egg products in a boxed mix, though? The diet soda cake doesn't rise as much as your regular cake, but it's still DELICIOUS! ![]()
