The kind that is white - the only thing I know to compare it to is like the white filling (not the custard type) that is in a chocolate iced Krispy Kreme doughnut? Or a cream horn? Does this have a name?

Thanks for any help!

Would it be pastry cream? Is that what you are thinking of? icon_smile.gif

It's called Bettercreme; you can buy it frozen at GFS. I don't particularly like it, but it is non=-dairy and many people prefere it.

maybe bavarian creme. Which is kind of a mix of custard and whipped cream.

Or it is a filling made from milk, flour, sugar, etc. Here is one recipe, I've seen many others, maybe on this site?

Cream filling

1/4 c. a.p. flour
1 c. milk
1 c. butter or marg., softened
1 t. vanilla extract
1/2 t. almond extract (opt)
1/4 t. salt

In a saucepan, combine flour and milk until smooth. Bring to boil over med. heat; cook for 1 min., stirring consistently. Mixture will thicken. Cool. Transfer to mixing bowl. Beat until smooth again and add butter, sugar, extracts, salt until light and fluffy, about 10 min.

Is that what they use in cream puffs?

Custard is used in cream puffs. I use this recipe for puff pastry bites that I made. They taste like cream horns but with a fraction of the work!

I've eaten cream puffs with custard too... but when I went to NY a couple years ago I bought this huge one and it had 'cream' that was really like frosting. I can't explain... it wasn't dairy or custard-ish, yet it didn't taste like buttercream either. I always wondered what it was. Guess I should have asked the bakery.

Thanks All! I'm still not sure exactly what I'm talking about, lol! It sounds like what parismom had - I'm going to try the recipe that jdelectables posted - it sounds like it might be it - Thanks, jdelectables!

Thanks again to everyone!
