I am a little new to this and have had a couple of disasters with my icing. So, far it has turned out great for class but a couple of times when I practiced, the cake started coming up with the icing. Was my icing too thick??? My cake too moist???? Help!!
The icing may be too thick. Try thinning it down by adding a bit of water to it. Also, if you try to ice the cake too soon out of the oven, then you can get crumbs. You may also try putting a thin coat of icing on first (this is a crumb coat) let it sit a bit then go back and ice as usual.
Maybe your icing was too hard.Make sure it is on room temperature before working with it.Also when icing the cake I make sure I hold the spatula slightly against the cake,and not lift.Just use single strokes until you come over the edge,but make sure you got plenty of icing to push with a spatula.Let it sit for about 10 min and then you can smooth it with a paper towel if it had crusted over.Sorry I wasn't more descriptive,but it is more a matter of practice.So just keep practicing and you will find what works best for you.Just what ever you do,don't get discouraged and give up.Keep trying.After all,there is a whole forum here on the CC designed just for that.And after all your cakes look really good.So I know taht you can do it.
