Saddle Cake Need Ideas Please

I have a customer who orders a cake for her boss' birthday every year and she really wants a saddle cake. I am not sure where to even start. I was hoping someone would be able to help get the creative ball rolling. Thanks I know you all are very creative and will think of something Fabulous!!!

can you carve a saddle shape out of a 11x15 or something like that?
Then you could add all kinds of fun stuff with fondant. You could make the fondant look like carved leather and make little silver dusted "studs" and stars and make those fancy stirrups like they had back in the movies like (o heck, I can't remember now, sheesh, oldtimers duh-sease is creepin in) Oh yeah, Tom Mix etc. etc.

The only thing I can think is to bake sheet cake and then bake one or two cakes in bowl or use wonder mold to get round shape for saddle to sit on. Sit the round mounds on top of sheet cake and form saddle out of fondant and lay on top of the rounded mounds. Or instead of using bowl or wonder mold you could probably just bake round or square cake, cut and shape for the foundation for the saddle. Then maybe make picket fence posts out of royal icing to put around perimeter of sheet cake, add detailing to saddle, etc.
