All-righty... DH came to me today and asked what I would charge for doing desserts for an event with 1500 guests... I said somewhere between $3-$5/pp but it was completely dependent upon WHAT was specifically ordered and if it all had to be baked fresh or if I could "cheat" a little using some of my suppliers who also have pre-fab items that are really good..
Anyways.. Fast forward, even though DH wasn't wanting to tell me what the event was for, I just KNEW ![]()
.. The event is for a CD launch for my MIL... I'm NOT a fan of her music to say the least, but hey, I can do a display dummy then servings of cake/cookies because I don't need to be a fan in order to do the cake.. Not a big deal..
But, since this is MIL... Knowing I probably won't be doing it because I'm going to be out of town that weekend so I've got my excuse to NOT be there (Unless my IL's buy me out of the contract I've got), I think it'd be possible that I could still do the baking for it but would need to hire someone to do the serving (yes Moydear, if I get this gig, you're getting a call), so I'm wondering if I charge materials plus 5% if I'm being realistic or not on the work versus pay factor given that it is the IL's and I'm also using their kitchen space for "free"...
What do ya'll think is a reasonable quote to put out there so if I do end up getting it because MIL's pre-budgeted amount is probably more than what everyone wants to let her spend (don't get me started on the background on this, but suffice to say, I'd have a kick-

Wow! I can't even imagine having to make that many servings. I think $3-5 sounds reasonable, especially if you can order them from somewhere else.
Sorry, I really don't have a good idea for a quote on this. But this will give you a bump.

if your cost is $1 pp and you have 1500 persons and you add 5% you will make $75 for all the work and planning and display.
I'd let someone else do it if that was all the pay you receive unless you want to volunteer.

Seriously, after talking with DH since I posted this earlier, I doubt that I'm going to get this one anyways even if I was going to be around that weekend. MIL only has $1230 budgeted for the food and $1360 for the servers/cleanup/janitor for this... I honestly don't think she did her research/homework ahead of time because any bakers worth their salt around here are at least $3 serving or $2.50 "You get what I decide to give you in an aluminum pan, and if you're lucky it might have frosting".. That budget supposedly also included coffee/tea/lemonade.. (Yes Risque... It's a "NO CAKE FOR YOU!" moment)

.. but if she were any other customer, I'd say it (as would many of us here)... "IS SHE ON CRACK!?!?!?!?!" thinking she can get something that actually TASTES good for that small of a budget for that many servings. The other thing is that she thought she was going to get staff from work to staff this thing and the reality is that because of the nature of the license I have, I'm the only one who has an "off-site" license, they don't. She also thought she could twist our food supply vendors for freebies for this thing, get real...
Anyway... sorry to turn this into a mini vent after finding out more information on this whole situation... I just wanted to know if it was going to proceed that there would be someone here to thump me upside the head (thanks MPC!) and not let me undercut myself to the point of resentment...
