When I saw them making these on tv. The cakes look really dense and "dry". They were picking up big slabs of cake like they were made of clay. They moved them and pushed and pulled, and they were not cracking. I can't imagine they taste all that good.
I make my Madhatter cakes using my exact same wedding cake recipes, moist spongecakes.
The only difference is I don't do thick layers of buttercream filling between the layers...to reduce the chance of "shifting" when they are so large and angled.
I'd say I only fill to a maximum of 1/4" between each layer, which is fine because the cakes get 3 or 4 layers each anyway.
