Dark Chocolate Buttercream

What is the best way to get DARK chocolate buttercream??? Mine always comes out light.

Use dutch processed cocoa powder rather than Nestle (it has a higher cocoa-fat ratio....or something like that. All I know is it's black instead of tan and intensely good!) and also, it would be yummy to melt down some dark chocolate and whip that in too.

I recently made some dark chocolate BC using a full pound of dark choc. It was still pretty light, so some brown/blk food coloring I think are worth trying.

The flavor is AMAZING and worth the effort!

Hershey's makes a great special dark chocolate cocoa that is nearly black. It is also dutch processed which makes it darker. It is super rich and makes a great choc buttercream.

I use the Hershey's special dark cocoa, too. It's amazingly good. Does come out almost black, like Cake_Geek said, so sometimes I mix a batch made w/the special dark with a batch made w/regualr cocoa to lighten it up.

I too have used the Hershey's special dark cocoa powder and it made the buttercream come out almost black. If you want to see what it looks like, the cheesecake in my photos has roses made from that buttercream.
